John Casey
With over 35 years in the culinary industry, John Casey has built a remarkable career spanning world-class kitchens, innovative ventures, and national leadership roles. From representing Australia at the Culinary Olympics to founding Dineamic Australia, he has continually pushed the boundaries of foodservice excellence. As National Food Services Manager for one of Australia’s largest retirement groups, John transformed dining standards across 92 communities. Today, as Director of Culinary Studio and author of Live Life Cook, he continues to champion better nutrition and quality food experiences for all. His unique blend of classical training and forward-thinking innovation reflects his belief that everyone, from athletes to aged care residents, deserves nutritious, flavourful, and beautifully prepared meals.
Fairley (Fairlo) Wijesinghe
Fairley (Fairlo) Wijesinghe is an experienced professional specialising in the health and aged care sectors. With a deep commitment to compassion and reform, Fairley has been an active advocate and campaigner for aged care reform and a contributor to the Victorian Royal Commission into Mental Health. Holding a Diploma and Certificate IV in Mental Health and a Certificate IV in Training and Assessment, Fairley combines lived experience with professional knowledge to influence meaningful change. Beyond professional work, Fairley volunteers across multiple community organisations, including Roses in the Ocean (Suicide Prevention), Mentoring Men, and Culture Nest, where they serve on the advisory committee. They also contribute as an Advisory Member for the Victorian Multicultural Commission RAC and the Monash Council Disability Services, supporting inclusive, community-driven initiatives. Driven by empathy and purpose, Fairley continues to advocate for dignity, mental wellbeing, and respect across all areas of aged care and community service.
Anthony Mutton
Anthony Mutton is an accomplished Chair, Non-Executive Director, and Managing Director with over 30 years of leadership experience across the aged care, health, and not-for-profit sectors. He has extensive expertise in governance, aged care standards, strategic procurement, and organisational leadership, having chaired The Mayflower Group (2020–2024), Edith Bendall Lodge, San Carlo Homes for the Aged, and Olivia’s Place, and serving as an Independent NED with the Myotherapy Association of Australia and Seafood Industry Victoria. As Managing Director of City Fresh Wholesalers since 2003, he has grown the business to $4.2 million in annual revenue. Holding an MBA and governance credentials from AICD and Harvard Business School, Anthony is a Fellow of AICD, GIA, and the Taxation Institute, recognised for his strategic insight, governance acumen, and values-driven leadership.
Rochelle Rich
Rochelle Rich is a finance professional and social-enterprise founder, bringing over 20 years’ experience across industry, governance, leadership, and community engagement. She leads initiatives that strengthen mental-health awareness through practical, purpose-driven business models. Rochelle joins VIITE’s Academic Governance Board to support excellence and relevance in vocational education, with a focus on industry demands and community wellbeing.
